Favorite Long Grain Rice


Three Cheese Vegetable and Rice Skillet

Serves 4

Ingredients:

1 cup S&W® Brown Rice or S&W® White Rice
1 tsp olive oil
1 tbsp garlic, chopped
1/2 cup onion, chopped
1 cup red bell pepper, chopped
2 cups broccoli florettes, cooked
2 tbsps fresh basil, chopped
2 tbsps Parmesan cheese, shredded
1/2 cup low-fat Mozzarella cheese, shredded
1/2 cup low-fat Monterey Jack cheese, shredded


Directions:

Prepare rice as per package directions.
 
Heat oil in a large non-stick skillet over medium heat.  Sauté garlic for 30 seconds; add onions, bell peppers and broccoli and cook 5 minutes.  Stir in cooked rice and remaining ingredients.  Cover skillet, reduce heat to low and cook 2 more minutes, or until cheese is melted.
