Favorite Long Grain Rice


Vegetarian Pizza

Serves 4

Ingredients:

1 cup S&W® Brown Rice
2 egg whites, beaten
2 cups Mozzarella cheese, shredded (divided)
4 vegetable cooking spray
2/3 cup pizza sauce
2 tsp Italian seasoning
1/4 tsp garlic powder
1 tbsp black pepper
1 tbsp Parmesan cheese, grated
1 cup mushrooms, sliced
3/4 cup zucchini, thinly sliced
1/4 cup ripe olives, sliced
1/4 cup red pepper, cut into strips
1 tbsp parsley, chopped


Directions:

Preheat oven to 400º F. Prepare rice according to package directions. Combine rice, egg whites, and 1/3 cup Mozzarella cheese in a large bowl. Press into 12-inch greased pizza pan. Bake for 5 minutes. Combine pizza sauce, Italian seasoning, garlic powder and black pepper in a small bowl; spread over rice crust. Sprinkle with Parmesan cheese. Layer 1/3-cup Mozzarella cheese, mushrooms, zucchini, olives and red pepper. Top with remaining cheese. Bake for 10 minutes.
